The Carrot cake is a real desert and is perfect for afternoon coffee. You can make a tasty carrot cake with a perfect glaze of cream cheese, icing sugar and lemon juice by yourself just like that!


3 organic eggs
3 cups granulated sugar
3 cups flour
1 teaspoon vanilla
3 teaspoons baking powder
1 1/2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1/2 teaspoon ground ginger
1 pinch of salt
1 1/2 cup sunflower oil
4 1/2 cups grated carrots
Cream Cheese Frosting
60g soft butter
4 cups powdered sugar
1 teaspoon vanilla
Zest of 1 lime
100 g Philadelphia

How to make Carrot Cake:

1. Preheat the oven to 150 degrees.
2. Beat eggs and sugar white and fluffy.
3. Mix all the dry ingredients and add them into the egg mixture.
4. Add the sunflower oil and grated carrot.
5. Fill the batter into a greased dish and floured cake pan with removable rim, 24 cm in diameter.
6. Bake in middle of oven for about 55 minutes. Try using a stick, it should not be sticky.
7. Let carrot cake to be cool.

Cream Cheese Frosting

8. Whisk all creamy ingredients.
9. Spread the frosting on the carrot cake.
10. Serve carrot cake in a fancy cake stand.
